What is Ponzu sauce?
Ponzu sauce is an amazing Japanese seasoning that you can enjoy the refreshing citrus flavour and umami taste of soy sauce at the same time. It is one of the most versatile ingredients in your kitchen. It can be used in almost any way. If you want to compare it to something, think of it as an ingredient similar to a vinaigrette.
These are some of our favorite ways for using ponzu:
1. To Finish a Dish – A few shakes of ponzu in the last few minutes of cooking will punch up the flavors in a stew or a stir-fry sauce.
2. In a Marinade – We love the slight citrus note the ponzu sauce adds to a marinade for flank steak or pork. We haven’t tried it yet, but we’re curious to try making ponzu ceviche this summer!
3. In Salad Dressing – A ponzu-based vinaigrette goes particularly well with salads of hearty greens, like raw kale and radicchio salads.
Looking for a good ponzu sauce recipe to make at home? We’ve got you covered! Here’s what you’ll need:
2 tablespoons of rice vinegar
½ cup mirin (rice wine)
1 piece of kombu (edible kelp)
½ ounce katsuobushi (bonito flakes)
½ cup yuzu (if need be, you can substitute a half cup lemon juice or lime juice)
½ cup soy sauce (light preferred)
Whisk these together until combined. Then put in an airtight container and allow the ingredients to get acquainted for about thirty minutes. After this, give it a good shake, and it’s ready!
