Yuzu Juice - What Is It and Where Does it Come From?
Yuzu juice is a Japanese citrus fruit that comes from wild yuzu trees that have not been grafted. These wild yuzu trees grow randomly along the Tokushima prefecture tracks. The fruits grow between 300 and 400 meters above sea level, and annual production is about 25 tons.
Yuzu juice has a strong citrus taste, with a light touch of floral, lime blossom aromas. When used on menu’s the yuzu juice gives an intense but sweet flavour. The Yuzu trees are scarce to come by, and it’s estimated that there are only 500 trees left in the whole Tokushima prefecture, making the Yuzu juice even more special when added to your menu.
