Yuzu Citrus Granola Bites
We are in love with the flavour of our Tosu Yuzu Juice. Its going into anything sweet we are making at the minute and our favourite this week at Cottage Foods is these little Granola Bites. Perfect for an afternoon sugar craving fix!
Ingredients:
100 grams rolled oats
50 grams Triple Lion pumpkin seeds
60 grams flaked almonds
50 grams sunflower seeds
12 grams Triple Lion quinoa
20 grams desiccated coconut
4 tablespoons Tosa Yuzu Juice
2 tablespoons chia seeds
1/2 teaspoon ground turmeric
85 grams black treacle
85 grams maple syrup
180 grams Propper nutty Nowt But Nuts
1/4 teaspoon fine salt
5 tablespoons icing sugar
water (Enough, to make a thin drizzle!)
100 grams chocolate
Method:
Preheat oven to 180C. Completely line a 9 x 13 tin or glass dish with parchment paper, with some of the paper sticking up so you can lift it all out to cut up.
Put oats, almonds, pumpkin seeds, sunflower seeds and coconut on a baking tray and bake in the oven for eight minutes. Remove from the oven and let cool.
Meanwhile, pop all the wet ingredients into a large saucepan and heat through, stirring occasionally with a wooden spoon or heat-proof spatula.
Add everything from the tray and all of the remaining ingredients to the saucepan and turn well with a spoon or spatula.
Press the mixture into the lined tin or dish, folding the paper over it to really press down and get any air out. Score it with a sharp knife, cover and let it cool and harden for at least an hour before cutting. If it is warm where you are, pop it in the refrigerator.
To make the drizzle mix the icing sugar with water and a tablespoon of Tosa Yuzu juice.
Top with flaked and broken chocolate.....
Once cut into squares, drizzle over the sweet yuzu mixture or melted dark chocolate.
